ITB’s are Individual Throttle Bodies, and what they do is add a boat-load of response to your engine.
From factory, most car engines(most, not all) are fitted with a common plenum intake and one(sometimes two) throttle body/throttle plate and as i understand it, this proves more efficient most of the time on cars that are not super built straight from factory.
Now, motorcycle engines rev much higher than car engines, so from factory they have a throttle body for each cylinder, but when you put ITB’s on a car, you are giving the cylinder it’s own intake, it’s own throttle body, and a different fuel injection system, which requires a tune. Most people will put ITB’s on an engine so that it can breathe more, gain response, and if built properly, rev much higher than the original limit.
